It's pumpkin season! I honestly can't stand pumpkin spice latte's, but I love the Pumpkin Cream Cold Brew from Starbucks. Paying $4.95 plus all the extra sugar is getting old. This weekend, I decided to try to make a pumpkin cream cold brew DIY and it turned out SO good! I just knew I needed to share all the details with you here! It's the perfect drink while the temperatures are still warm. I'll be making these daily for sure!
This recipe is super simple. All you need is a good cold brew (I actually like the Starbucks Blonde Cold Brew), pumpkin puree, sugar or sugar substitute (I like Swerve), heavy cream, and pumpkin pie spice. You'll pour your cold brew over ice, then in a small bowl mix 1 tablespoon of pumpkin puree, 2 teaspoons of sugar, and 2-3 tablespoons of heavy cream. I mixed mine with a small battery powered mixer. This worked well but it took me about 2 minutes to mix. You'll want to mix it until it's creamed together.
You'll then pour the cream mixture on top of your cold brew and then top with pumpkin pie spice. You can also add a pinch into your cream mixture too. I like that this doesn't have any added sugar too (unless you want it to). We really like using the Swerve sugar substitute. We have a granulated sugar and a confectionary sugar option from them. It's a great option for baking too! You honestly can't tell the difference between Swerve and regular sugar.
