Cranberry Orange Scones with Applesauce

Perfect for breakfast or a snack, these Cranberry Orange scones are lightened up with applesauce to cut calories.

Ingredients
  

  • 2 3/4 cup all-purpose flour
  • 1/3 cup light brown sugar (packed)
  • 1 tbl baking powder
  • 3/4 tsp salt
  • 1/2 tsp ground cinnamon
  • 1/2 cup unsalted butter, cubed and cold
  • 1/2 cup Musselman's Unsweetened Applesauce
  • 1/2 cup dried cranberries
  • 1/2 cup dried/candied mandarin oranges
  • 1/2 tsp orange zest
  • 2 large eggs
  • 1 tsp vanilla extract
Topping (egg wash)
  • 1 egg white
  • 1 tbl water
  • 2 tbl sanding sugar
Icing
  • 1 cup confectioners sugar
  • 1.5 tbl milk

Method
 

  1. Combine dry ingredients into a large mixing bowl
  2. Add in cubed butter and cut into dry ingredients with a fork. Add in the dried cranberries, mandarin oranges, and zest.
  3. Combine applesauce, vanilla extract, and eggs. Add to the dry ingredients and mix. Dough will be crumbly.
  4. Once combined, take dough and lay it on a clean surface. Knead together until a ball is formed.
  5. Separate dough into two sections. Form two circle shapes about 2 inches tall. Cut into wedges (you should have around 12).
  6. Place wedges on a parchment lined baking sheet and chill for 20-30 minutes in the freezer. Pre-heat oven to 425 degrees F.
  7. Once chilled, brush scones with egg wash and sprinkle with sanding sugar. Bake for 15-20 minutes or until golden.
  8. For icing, mix confectioners sugar and milk until smooth. Once scones are cooled, drizzle icing on top. Let set for 15 minutes and serve.
