Are you in charge of hosting during Christmas? We almost always host Christmas breakfast, and we love to serve a variety of foods. We typically make an egg casserole, a french toast bake, and serve some sort of pastry. I wanted to test out a new recipe prior to the big day, and I made these lightened up cranberry orange scones with applesauce. We used the multi serve jars from Musselman's. We can't get enough of this applesauce in our home. I can't wait to share these scones with you! Make sure to read all the way to the end of the post for a special offer!

Did you know that you can replace or substitute oil in baking recipes with applesauce? I love doing this because you can't tell the difference and you can sneak in an extra fruit into baked goods. I'll be honest, the girls love their applesauce so I never need to sneak that in! I love scones with coffee and these would be perfect to serve for a Christmas breakfast. The cranberries and oranges taste so good together and they look festive for the holidays. They are also really easy to make, so you can totally bake them the day of your breakfast.

  • 1/3 cup light brown sugar (packed)
  • 1 tbl baking powder
  • 3/4 tsp salt
  • 1/2 tsp ground cinnamon
  • 1/2 cup unsalted butter, cubed and cold
  • 1/2 cup Musselman's Unsweetened Applesauce
  • 1/2 cup dried cranberries
  • 1/2 cup dried/candied mandarin oranges
  • 1/2 tsp orange zest
  • 2 large eggs
  • 1 tsp vanilla extract

Topping (egg wash)

  • 1 egg white
  • 1 tbl water
  • 2 tbl sanding sugar

Icing

  • 1 cup confectioners sugar
  • 1.5 tbl milk

Instructions

  • Combine dry ingredients into a large mixing bowl
  • Add in cubed butter and cut into dry ingredients with a fork. Add in the dried cranberries, mandarin oranges, and zest.
  • Combine applesauce, vanilla extract, and eggs. Add to the dry ingredients and mix. Dough will be crumbly.
  • Once combined, take dough and lay it on a clean surface. Knead together until a ball is formed.
  • Separate dough into two sections. Form two circle shapes about 2 inches tall. Cut into wedges (you should have around 12).
  • Place wedges on a parchment lined baking sheet and chill for 20-30 minutes in the freezer. Pre-heat oven to 425 degrees F.
  • Once chilled, brush scones with egg wash and sprinkle with sanding sugar. Bake for 15-20 minutes or until golden.
  • For icing, mix confectioners sugar and milk until smooth. Once scones are cooled, drizzle icing on top. Let set for 15 minutes and serve.

Musselman's Applesauce

Musselman's applesauce is a favorite in our home. We love the squeezable's for the girls school lunches and snacks. The multi-serve jars by Musselman's are great for baking or eating while at home. We love making parfaits out of them for the girls too. It's nice to have a resealable jar so we can dig into it at any time. Musselman's applesauce is made from fresh, 100% American grown apples. It has the best homemade taste too. We love that it doesn't contain any high fructose corn syrup too!
