This spinach and egg frittata made with Almond Breeze® Extra Creamy Almondmilk is perfect for any breakfast!

Ingredients
  

  • 8 eggs
  • 3/4 cup feta cheese
  • 2/3 cup Almond Breeze® Extra Creamy Almondmilk
  • 3 cup chopped spinach
  • 1 cup chopped peppers
  • 1 shallot finely sliced
  • 1 tsp salt
  • 1 tsp pepper

Equipment

  • 1 cast iron skillet or oven safe pan

Method
 

  1. chop peppers, spinach and thinly slice shallot
  2. pre-heat oven to 325 degrees Fahrenheit
  3. add oil to a cast iron skillet over medium heat
  4. sauté shallot, spinach and peppers for 3-5 minutes or until tender and season with salt and pepper
  5. in a large mixing bowl, mix together eggs, salt, pepper, Almond Breeze® Extra Creamy Almondmilk, and feta
  6. Add in sauté veggies/spinach
  7. Add mixture back into skillet and bake for 20-25 minutes or until the center is set
