I am so excited to share a super easy, no bake recipe with you all today! These can be customized for any holiday using different sprinkles. Since Easter is right around the corner, we used Easter sprinkles for our no bake holiday NILLA Wafer cake bites.
I’m sure you're used to pairing NILLA Wafers with banana pudding for a yummy dessert. These NILLA Wafer cake bites taste SO good and they are SO easy to make. McKinlee and Madi got in on the “baking” which they love. Being in the kitchen with their dad and I is one of their favorite activities. We picked up these NILLA Wafers for our cake bites from our local Fred Meyer.
For our NILLA Wafer Spring cake bites, you’ll need:
One 11 oz box of NILLA Wafers
One 3oz clamshell fresh raspberries
One stick butter
Powdered sugar
White chocolate baking chips
Festive sprinkles
We made a homemade fresh raspberry buttercream filling for our cake bites. Let me tell you, it’s the best frosting I’ve ever tasted. The raspberry flavor was out of this world. It was so smooth and creamy, I’ll definitely be making this recipe again. Best part, it was so simple to make. Here is the recipe for our raspberry buttercream frosting.
Once our raspberry buttercream frosting was ready, we assembled our holiday NILLA Wafer cake bites. We took a lined cookie sheet and laid out our NILLA Wafers. Then, we spread a small dollop of frosting on to one cookie and put another cookie on top to form our cake.
Once all NILLA Wafer cake bites were formed, we put them in the freezer to chill for 15 minutes. When the 15 minutes is up, you’ll take your cake bites out of the freezer.
Lay out parchment paper or cooling racks on your counter. Next, you’ll heat up your white chocolate chips in the microwave in a microwavable bowl. Heat for 30 seconds, stir, then another 30 seconds and so on until all the chips are heated through.
Take your chilled NILLA Wafer cake bites and dip them into the chocolate. Flip over until fully coated. You’ll then sprinkle your Easter sprinkles on top and let cool.
Again, this recipe is SO easy so it’s a great one to get your little ones involved with. Have them coat the cookies in sprinkles or have them help you mix the frosting. We’ll be serving these at our Easter play date the girls are throwing with their friends.
