Heading back to school this year is unlike anything we've ever experienced! McKinlee is heading into Kindergarten, and I was really looking forward to her going to school, meeting friends, and learning so much! This year, we are starting the year off with distance learning. We got a taste of this last year while she was in pre-K. I tried to do some school-at-home lessons, but most importantly we tried to learn new things as we went about our day. This seemed to have the most lasting effect on both girls instead of trying to follow a strict lesson plan.

One of our favorite things to do is cook and bake together. I decided to do a fun afternoon activity that involved measuring and counting, while also making a sweet treat! We made these yummy peanut butter no bake energy bites using our favorite SKIPPY® Creamy Peanut Butter we picked up at our local Kroger store! These peanut butter no bake energy bites are honestly SO easy to make, even your little ones can get involved. You can customize them however you'd like by adding in ingredients you love or taking out ones that aren't your favorite.

The girls had so much fun talking about measuring the ingredients, pouring them in the bowl and mixing them. The best part was rolling out the balls. I'd highly recommend adding this type of activity into your school at home routine to mix things up! Have them count up the ingredients, learn about fractions, addition, etc. It's a great real world activity!

Shopping at Kroger 

We have always loved Kroger and we shop at their Fred Meyer brand store here in Oregon. They always have such great prices. I love shopping with their app and adding coupons to my list before I head into the store. They also offer grocery pick up which is super convenient especially right now.

SKIPPY® Creamy Peanut Butter No Bake Energy Bites Recipe

Peanut Butter No Bake Energy Bites

These easy energy bites will keep you and your little ones satisfied when the hunger hits!
Prep Time 5 minutes
Cook Time 15 minutes
Chill 2 hours

Equipment

  • Mixing Bowl
  • baking sheet
  • measuring cups
  • measuring spoons
  • food processor or blender
  • mixing spoon

Ingredients
  

  • 1 cup SKIPPY® Creamy Peanut Butter
  • 3/4 cup Oats blended until fine
  • 1/4 cup Mini Chocolate Chips
  • 1/4 cup Shredded Coconut (I used sweetened)
  • 1 tbl Honey
  • 1 tbl Maple Syrup
  • 2 tbl Ground Flaxseed
  • 1/2 cup Shredded Coconut blended until fine - for coating

Instructions
 

  • Mix all ingredients together in a bowl
  • Roll into 1 inch balls
  • Coat in blended coconut
  • Place on baking sheet and put in the refrigerator until chilled (about 2 hours)

These peanut butter no bake energy bites are so simple to make and taste SO good. Plus, you can sneak in things like flaxseed or chia seed and your kids won't know! They love anything with peanut butter, so these were a huge hit with them! They stay good in your fridge for around a week. They're a great pick-me-up during those afternoon slumps (for both kids and adults!).
