I just got both girls signed up for dance class and swimming lessons. Now that McKinlee is in school 5 days a week, we can’t do classes in the morning. So unfortunately, these classes take place in the evening. This means we need after school quick dinner ideas, to keep things simple for our family. We are big time cheese lovers in our family, and the girls could have something cheesy for every single meal. Today, I'm sharing our favorite quick and easy dinner for school nights. A tuna melt made with our favorite Colby-Jack Cheese slices!
We love making tuna melts for lunch, dinner, or even a quick after school snack. They’re so simple to make and it’s nice to have something warm even though it is so easy and quick to make. Tuna melts contain protein , and the girls gobble them up. We like making them on English muffins for the girls, and on bread for us. You’ll always find Cheese in our fridge since it is natural cheese. We love the variety in their line up of cheeses, but especially the sliced Colby-Jack! The girls are in half day school this year. I either pack lunch for them that they can eat on an after school adventure, or we head home for lunch. Tuna melts are a great lunch time option too. We love these paired with chicken noodle soup or tomato soup! Add in some fruit and veggies, and you have the perfect meal. We also love snacking on cheese, and always keep their cheese sticks on hand for the girls. Ryan and I enjoy them too! I am not a great cook, so I like having things on hand for when we need an after school quick dinner option. I usually make our tuna salad with fresh chopped green onions (it gives it such a great flavor) and mayo. Once you have your tuna and bread/muffin assembled just place your Sargento® cheese slice on top. You really can't get much simpler than that! I bake them in the oven at 350 degrees for around 15 minutes or so. I will sometimes broil them for a minute to make the cheese extra melty. The English muffin version is great open faced. The best part about this simple dinner is that the girls can help out in making them. They loved getting involved in the kitchen!
Since the girls are still pretty little, such a huge change in our schedule takes some getting used to. After we are done with dinner, we have them work on their to-do list. This is super simple and includes helping pick up around the house, picking out their outfit for school the next day, taking a bath/shower, brushing teeth, and putting on pajamas. It helps give them a sense of routine and helps ease them into the new schedule. We had such a great Summer with a full three months of no routine, so this is such a huge help. I will laminate the girls’ to-do list and print it off for them to check off each night with a dry erase marker.
