Three Easy Fall Recipes for the Whole Family

My neighbor and friend Kim recently started a food blog called My Two Gentleman.  I'm so excited for her to take over our blog today with a guest post!  Kim is a phenomenal cook.  The best part about her dishes are that they are always super healthy, but she never skimps on flavor.  Today, she is sharing three easy fall recipes for the whole family.  Her autumn chopped salad below is one of my favorites!  The dressing is so good.  Kim is also going to start offering cooking classes here in Portland.  Make sure to sign up for her email list for more info!  Take it away Kim!

Three Easy Fall Recipes

Over the past few years the Fall season has always been a very special time for me. During my childhood years I spent many hours playing softball games amongst the freshly fallen leaves.  It was when I met my husband for the first time while attending a New Mexico football game. I accepted my first teaching job out of graduate school. Most importantly the Fall is when my struggle with infertility came to an end and I found out I was pregnant with my first son.

For me, each recipe that I create has a special meaning to me. The flavors, colors, and smell all bring me back to a time that made me happy. It is no wonder why Fall recipes tend to be some of my favorite.

Sweet Potato Sopes

This traditional Mexican dish got a little makeover with the addition of sweet potatoes. I love the rich orange color and the additional health benefits it adds. Cooked in olive oil and topped with a delicious combination of flavor, serve as an appetizer or main dish.

Autumn Chopped Salad with Maple Orange Vinaigrette

I absolutely love the variety of textures that this salad brings. It is sweet from the maple but also offers a nice sour punch from the apples and cranberries. Serve as a side dish or add chicken and some avocado for a main meal.

Autumn Stacked Enchiladas

I am a huge fan of sticking to traditional foods, however these enchiladas are worth pushing outside of your normal comfort zone. Packed with flavor and a TON of veggies your family wont even miss the heavy cheese and meat. Need something after soccer practice? Throw these in the crockpot on low for 4-5 hours and watch the magic happen.
